Well, we've seen restauranteers, a sword-maker, and we know some have been members of the Imperial Guard. 

Likely there are a number of merchant and service professions (similar to the Jhegaala) that "honest" Jhereg engage in. It would seem to me that those Jhereg who operate as "fronts" for illegal activites are probably chose those particular businesses because they are typical professions for other members of the House who are not law-breakers. (Vlad's "Psychedlic Herb Shop", or Stony's front business in Northport are examples.)
