Partly good explanation.  Levitating big objects is relatively easy with
sorcery, but even easy sorcery spells cannot be maintained indefinitely
without burning out your mind (like the umbrella spell for the troops in
Dragon).  Only witchcraft makes long-term levitation reasonably easy.
Holding witchcraft spells can be done indefinitely by a large group of
witches since they can pool their energy, which sorcerers can't.

It's unclear how the pre-interregnum levitating castles were maintained, but
it wasn't just a permanent sorcery spell, since if it were that easy
Morrolan would have just done so.
